Fatty Acids

Fatty acids are hydrocarbon chains with a carboxylic acid group at one end. They are usually straight-chain but can also be branched. Some important properties of fatty acids include:

  • Number of Carbon Atoms: Naturally occurring fatty acids typically contain an even number of carbon atoms (C4-C24).
  • Saturation: Fatty acids are classified as saturated and unsaturated based on the number of double bonds in the hydrocarbon chain.
  • Saturated Fatty Acids: These have no double bonds in the hydrocarbon chain and are solid at room temperature (e.g., Palmitic acid, Stearic acid).
  • Unsaturated Fatty Acids: These have one or more double bonds in the hydrocarbon chain and are liquid at room temperature (e.g., Oleic acid, Linoleic acid).
  • Melting Point: The melting point of saturated fatty acids is higher than that of unsaturated fatty acids.

Fatty acids are fundamental components of triglycerides, which are the main constituents of fats and oils. They are also used in the production of soaps and detergents.

Oleic Acid

Oleic acid is a monounsaturated omega-9 fatty acid. It is found in many plant oils and, to a lesser extent, in animal fats as a glycerol ester. Some important properties of oleic acid:

  • Molar Mass: 282.46 g/mol
  • Boiling Point: 360 °C
  • Density: 895 kg/m³
  • Color: It is a colorless and odorless oil, though commercial samples may appear yellowish.
  • Saturation: It is a monounsaturated fatty acid, meaning it has one double bond in its molecule.
  • Melting Point: 13.4 °C

Oleic acid is found in many foods

  • Olive Oil: Oleic acid is the most common fatty acid in olive oil, which can contain up to 75% oleic acid.
  • Avocado Oil: Avocado oil is another rich source of oleic acid, containing up to 60% oleic acid.
  • Hazelnut Oil: Hazelnut oil is also high in oleic acid, containing up to 50% oleic acid.
  • Meat and Dairy Products: Animal fats also contain oleic acid, with levels around 30% in meat and dairy products.
